Cheats apple and raspberry crumble

Ingredients
  • 8large organic red apples – skin on diced
  • 1/4 cup Fresh or frozen organic raspberries
  • 1/2tsp Ceylon CinnamonI use changing habits
  • 2Tbsp Changing Habits gelatinmixed with 4 Tbsp filtered water and put aside
  • Water to cover ingredients while stewing
  • 1/4cup shredded coconut
  • 1/4 cup Organic Almondschopped
  • Sweetner of choice if wantedI don’t use any as the apples are quite sweet already
Instructions
  1. Add diced apples, raspberries, cinnamon and water to a saucepan and allow to boil gently for about 20 minutes
  2. Stir in bloomed gelatin mix and stir well. Continue simmering until water starts to reduce and mix thickens – at least another 10 minutes.
  3. Add a fry pan to medium heat and lightly toast the almonds and shredded coconut.
  4. Pour apple and raspberry mix in to 4 small ramekins and and add coconut and almonds on top. Eat as soon as it is cool enough.
Recipe Notes

I whipped up this recipe when I had too many apples. I wanted to get some of the amazing, gut soothing apple pectin in to my family and this was a great way to do it! No arguments. We also like to sneak in gelatin whenever we can as this has the same effects – soothing and rebuilding the gut lining. I use Changing Habits gelatin. It’s the best I’ve used so far. The toasted coconut and almonds on top have an amazing crunch. Be sure to get a preservative free coconut. Often the ones in the supermarkets have preservatives to assist with product longevity. The trouble is, it’s damaging to our bodies! Health food shops are usually your best bet.
