Fancy some gummies that are a little more fancy pants?

This recipe is a delicious way to get lots of good fats, delicious fresh mango, probiotics and gut healing gelatin in to your diet. Your kids will love this gummie slice and and so will you! Ours never last more than a day or two.

I’m actually making this one for Christmas. It will be beautiful and fresh on a hot Christmas day.

You can also switch the mango for mixed berries, blueberries or strawberries. Or why not invent something new and let me know how you go.

Be sure to use an organic gelatin. I use Changing habits and it never lets me down! We use gelatin in all types of gummies, to make gravy, in bulletproof hot chocolates and coffees and panna cotta desserts. It is so nourishing on your gut! Check out some of my recipes here.

I use Kultured Wellness culture starters for all of my fermenting, including the coconut yoghurt in this recipe. They are such quality, gut loving cultures! You can get your hands on some here to make beautiful yoghurt, kefir, fermented veggies and more! These cultures have changed our lives and many others around us.

The fruit will be the star of the show, so use mangoes that smell and taste amazing!!! Frozen still works well but nothing quite beats a beautiful fresh mango flavour.

If you are trying to reduce your sugar or fructose, you can actually plan ahead and ferment the mango. It takes a little over 12 hours and you have to check it often. It’s done as soon as all detectable sweetness has gone. I use the Kultured Wellness Kefir to ferment mine.

  • 1 Cup of fresh ripe chopped mango or frozen and thawed if fresh unavailable
  • 1 Cup of Kultured Wellness Coconut Yoghurt
  • 2 tablespoons of grass fed organic gelatin powder mixed with 3 Tbsp of filtered water in a small bowl put aside to bloom
  • 3/4 cup of filtered water
  • 1 tablespoon Optional - 1 Tbsp of sweetener of choice or stevia to taste honey or rice malt syrup are other options
  • 1-2 teaspoons of vanilla bean powder or use vanilla essence
  • 1/2 cup chopped fresh ripe mango
  • 1 tablespoon of grass fed organic gelatin powder mixed with 2 tablespoons of filtered water in a small bowl put aside to bloom
  • 1/4 cup filtered water
  • Juice of 1 lime
  • 1 tablespoon Optional - of sweetener of choice - stevia to taste honey or rice malt syrup are other options

Creamy Mango Probiotic Gummies
Instructions
  1. Base: Use a Pyrex rectangular dish or a slice tray lined with baking paper to pour mix into when ready.
  2. Get all ingredients out of fridge and bring to room temp before beginning.
  3. Place mango, yoghurt and sweetener of choice into blender and blitz on low until smooth.
  4. On your stovetop, heat the bloomed gelatin, stirring constantly. I use a whisk. Once gelatin is completely dissolved, take off heat and add straight to blended mix and blitz until combined.
  5. Pour into dish or tray and place in fridge until set – usually 20-30mins is heaps.
  6. Top Layer: Add gelatin mix to saucepan on low to medium heat and stir until gelatin dissolves. Add fresh chopped mango and sweetener to the mix and stir for another two mins.
  7. Remove from heat, stir in lime juice and place in to blender. Blitz until smooth and then pour mixture into glass Pyrex or lined tray to complete the top layer. Place in fridge for at least half an hour then slice into squares.
  8. Warning! This is very addictive!
