I was thinking to myself that it has been a few years since I had a sweet biscuit. I put my thinking cap on and decided to whip something up. I didn’t have to much in the pantry so I called in to The Source wholefoods store and grabbed a couple of scoops of a low sugar Paleo muesli mix. Then off I toddled home to bake!

Instructions
  1. Preheat oven to 170'C and line a flat baking tray with a silicone mat or brown baking paper.
  2. Place muesli and egg white into a small mixing bowl and mix until well combined. Your mix should be just moist all through - not too wet.
  3. Squish together a heaped dessert spoon full of the mix and place on baking paper. Repeat until all used.
  4. Place in over for 20 minutes and check to see if done. Should be set and a little crispy.
  5. Leave out to cool, then place in an air tight container. Can leave in container in cupboard for a couple of days. If you love them then be sure to double the mix next time! Enjoy!
