I love an Asian inspired soup. It sort of takes me back to a time when I used to travel in Asia almost every year. How times have changed. Sooooo long ago. Do I sound like I need a holiday? lol

Anyway, this soup has healing and anti-inflammatory ginger and turmeric, bone broth and the zing of kaffir lime leaves – Scrunch them well so the flavor comes out in the soup. Heaps of greens to nourish you and coriander that is great for detoxing heavy metals.

Ingredients
  • 1 piece local white flesh fish, diced
  • 1 Tablespoon Coconut oil
  • 1 teaspoon Grated turmeric
  • 1-2 Tablespoons Grated ginger
  • 2 Cups chicken or fish bone broth or equiv in concentrate and 2 cups hot filtered water
  • 1 Cup Kultured Wellness Coconut Yoghurt or 1 cup of coconut cream
  • 3 stems Shallots – chopped
  • 4-5 Kaffir lime leaves scrunched
  • 3 Cups Greens - I used beans, brocolli and bok choy Other ideas - baby spinach, celery, zucchini etc
  • 1/4 cup Chopped Coriander for garnish
  • Generous pinch of salt & cracked pepper

Instructions
  1. Add coconut oil to large fry pan on medium heat. Once melted, add ginger, turmeric and shallots to pan and cook for about 2-3 minutes.
  2. Add in greens, kaffir lime leaves and broth, cover and bring to boil.
  3. Add in salt, pepper and coconut yoghurt or cream. Mix until well combined.
  4. Add in fish pieces to simmering pan. Make sure all pieces are under liquid and cook covered for a few minutes. Check a piece of fish to see if cooked through. You want it just done so it it’s nice and tender. Serve into bowls and garnish with coriander
