Creamy Mango Love Bites

Ingredients
  • 1 Ripe Mangopeeled and flesh removed from seed
  • 1/2cup Ayam Coconut Cream
  • 3Tablespoons Organic grassfed beef gelatinI use Changing Habits
  • 1Tablespoon Fresh lime juiceOr just one good squeeze
Instructions
  1. Place mango flesh, lime juice and coconut cream in a blender and blitz on med – low until combined and smooth.
  2. Pour in to a small saucepan and sprinkle gelatin over mixture and leave to bloom for about 5 minutes.
  3. Add med-low heat to saucepan and whisk constantly until gelatin is dissolved. You want the mix to be quite hot but not quite boiling.
  4. Pour in to moulds for fun shapes or into a rectangular glass dish and place in fridge for about 30 minutes.
  5. Pop out of moulds and place in an airtight container. If you used a glass dish, cut into bite size squares and keep a lid on them.
  6. Store in fridge and eat within about 3 days of making them.
