Add diced apples, raspberries, cinnamon and water to a saucepan and allow to boil gently for about 20 minutes
Stir in bloomed gelatin mix and stir well. Continue simmering until water starts to reduce and mix thickens - at least another 10 minutes.
Add a fry pan to medium heat and lightly toast the almonds and shredded coconut.
Pour apple and raspberry mix in to 4 small ramekins and and add coconut and almonds on top. Eat as soon as it is cool enough.
