I just love eating Panna Cotta. They are so healthy, easy and delicious! I use my Vanilla Panna Cotta recipe as a base for all of my Panna Cotta Recipes and there is no end to the experimenting you can do to come up with new and exciting flavours!

All of my recipes are dairy and gluten free and usually contain something to heal or soothe your gut. This recipe is no exception with peppermint oil to help alleviate digestive discomfort, good fats of coconut cream and Gelatin to help heal and seal your leaky gut. It is soooooo important that you use organic grass fed beef gelatin. I use Changing Habits as you can be sure there are no hormones, antibiotics or chemicals used whilst raising the animal. It also has no additives, preservatives, colouring or flavours!

  • 1 400ml Can Ayam Coconut Cream
  • 1 Teaspoon Organic vanilla bean powder Or use vanilla essence or vanilla bean paste
  • 1 Tablespoon Organic grassfed beef gelatin I use Changing Habits. If you prefer a firmer dessert - use 2 Tablespoons
  • 1-2 Teaspoons Sweetener of choice - stevia, honey, maple syrup Or you can even skip the sweetener
  • 3 Tablespoons Organic Raw Cacao powder
  • 1-2 Drops Food grade Peppermint essential oil

Choc Mint Panna Cotta
Instructions
  1. Add coconut milk to a medium saucepan and sprinkle gelatin over it and leave to bloom for a few minutes.
  2. Place saucepan on medium heat and continuously stir/whisk until powder is dissolved. You want it just about to boil but switch heat off just prior.
  3. Whisk in Cacao, vanilla, sweetener (if using one) & add 1 drop of peppermint oil. Taste mix. Add one more drop if desired.
  4. Pour in to 3 ramekins and place in fridge.
  5. Take out of fridge about 10 mins before eating. You can grate some organic chocolate and place a sprig of fresh mint to garnish if you wish.
